Ingredients
1 egg

1/4 cup (60ml) grated Cheddar or Tex-Mex blend

1/2 cup (125ml) combination of red or green pepper and finely chopped onion

1/2 tbsp (7.5ml) salsa

1 large soft whole wheat tortilla

Preparation
Stir all ingredients together in a bowl. Spoon mixture along center of tortilla. Roll, or fold sides over center. Place filled tortilla on a microwave safe plate. Cook on high about 1 to 1½ minutes—until egg is cooked and cheese is melted. Let cool a bit before eating.
